STAGIAIRE/INTERNSHIP 2024
Frantzén is Sweden’s only three-Michelin-star restaurant, renowned for its New Nordic cuisine with Japanese influences in both the food and service. The restaurant is highly focused on delivering a world-class dining experience, serving just 23 guests per seating with two services daily. The team consists of over 20 staff members and 15 interns, all dedicated to perfection in every detail.
During my three-month internship, I pushed myself to be an integral part of the service team, working in both lounge service and the main kitchen. I gained hands-on experience running my own canapé station in the lounge, delivering perfect bites to guests, and explaining each dish in English or other languages I could speak. In the main kitchen, I contributed to plating, guest seating, preparing trays for each course, and assisting with front-of-house service when needed.
In addition, I gained valuable insights in the prep kitchen, handling tasks such as precise chopping, slicing, and preparing ingredients, many of which required specialized tools and techniques. This experience allowed me to see the full operation and understand the level of dedication needed in a world-class kitchen.
This internship taught me invaluable lessons in perfection, creativity, dedication, cleanliness, and organization—skills I carry with me in all future endeavors.
